Our Story


Ellen "Mammy" Ehsa - Red Snapper
The Restaurant was founded by mommy Ellen T. Ehsa, known as "mammy". She was born and raised in the Philippines and migrated to Pohnpei, Micronesia, with her husband and first-born back to in 1975. Mammy opened "Red Snapper" in 2003 due to her love for cooking and feeding her kids, grandkids, and just about anyone who loved to consume what she made.
What inspired her to cook and create the restaurant is her love for her grandchildren, as she loved to gather and feed them so that they would not go hungry. She brought meals from her home to the restaurant to give an "at home feeling" or a safe space of gather to have a meal. Back then, with her as the head chef, the best sellers were the pancake, fried rice, tuna miso soup, and steamed fish known as "Red Snapper", which became the name of the restaurant that we know and love today.
With the growing number of islanders, visitors, and diverse palettes, the food menu grew and changed over time. What did not change is the love and homy safe space feeling in the food and restaurant that she wished to share with everyone.
